Arbi – 250 g

Smashed Arbi – 12 pieces

Chat Masalla – 1¼ tsp

Black salt – 1¼ tsp

Black Pepper – 1 tsp

Garam Masala – ½ tsp

Recipe Yield – 10 – 12 Arbi Cutlet

Serving Size per Head – 2 pieces



  • Wash the arbis.
  • Boil with excess water (after washing) and some salt till arbis starts to crack open.
  • Drain, cool and peel.
  • Alternately peel and boil with excess water and salt. This is followed for large scale.
  • Smash each boiled arbi partially and then deep fry at high temp.
  • Frying Temperature: 175°C.
  • Fry till reddish hue.
  • Sprinkle all the dry powder masala and stir well.
  • This goes as it is and does not require any chutneys.

Serve anytime and with any meal. Preferably serve hot.
