For 3-4 Persons
Rice – 1 cup*
Jeera – 1 tsp#
Ghee – 2.5 tsp#
Cashew nuts – 25 g
Green chili – 2-4
Coriander leaves – 1/4 cup
Salt – 1 1/2 tsp
Water – 2 cups
*1 cup = 250 ml
#tsp = table spoon



  • Keep water on the stove for boiling. Wash the rice, drain water and add rice to the boiling water.
  • Cook rice for 2-3 minutes covering the vessel with a lid. Uncover the vessel and stir the rice once. Cover it and leave it on a slow flame for 15 minutes.
  • Switch off the flame and leave the vessel covered for 5 minutes. Remove the cover and cool the rice. After few minutes, spread the rice on a plate and cool it.
  • In a vessel, heat the ghee. Add jeera. The test for optimum temperature is that the added jeera would turn brown. Then add cashew. The ghee should be hot enough to fry the cashew to golden brown. Add chili and rice. Fry 2-3 minutes and add chopped coriander leaves. Jeera rice is ready.
