Ingredients

For 100 pcs
Kesar (Saffron) – 1g
Cashew nuts – 1 kg
Sugar – 700g
Milk – 25ml
Water – 250ml

 

Process :

  • Soak Kesar in 25ml hot water for 30 min.
  • Grind the cashew nuts into fine powder in a mixer.
  • Make a clear sugar solution using sugar, milk and water. Milk should be added after the sugar has been completely dissolved in water. Add Kesar water and bring the solution to boil.
  • Add Cashew powder and cook on a slow flame in a thick bottom pan. Cook to the point till whole mixture becomes a single mass and no longer sticks to the bottom of the pan.
  • Spread the mix on a clean flat surface on which a fine layer of ghee has been applied. Use a chapatti rolling pin to make a fine spread of the mix. Cut into diamond shape pieces using a knife and steel or wooden scale.
  • Delicious Kesar kaju katlis are ready.
