Ingredients

(for 5 persons)

Udad dal – ½ cup

Idli boiled-rice – 2 cup

Methi – ½ tsp

Salt – 1 TBS

Yield – 30 Nos

Process

  • Soak the urad dal and boiled rice separately for six hours. Add methi to boiled rice while soaking.
  • Grind the urad dal very fine, till small tiny bubbles appear. Grind the rice separately.
  • Mix the ground urad dal and rice. Ferment the mixture for 6-8 hours. Add salt and mix well.

Steaming

  • Beat the batter nicely before steaming.
  • Wash and dry the idli trays. Apply a think film of oil on the trays.
  • Pour the batter in the idli tray and steam for 8-12 minutes.
  • Make sure that the water in the steamer doesn’t boil over into the batter.
